Tombo Tuna (warm water albacore) is mild and has a medium to rich flavor, meaty undertones, and an ocean-fresh finish. The texture is firm, dense, moist and steaky.

Our Tombo tuna almost exclusively comes out of Hawaii because the fishery is well-managed, the fish is sustainably harvested, and the quality of product is extremely high. Tombo is caught using longlines, handlines, and by trolling, and average around 50-70 pounds round weight. The flesh ranges in color from light to deep pink/red depending upon fat content and seasonality and turns white when cooked. Because of the market value of this special fish, it is typically flown to the West Coast within a day of being caught. We receive and ship out shipments of fresh Tombo tuna daily.
