Corvina is a generic name for the Red drum or redfish of which there are over 270 species. Corvina is like a warm water snapper with larger flake and is mild, sweet, and firm. It is pink when raw but cooks up snow white. Our corvina comes from Central and South America where fishing pressures are less than they are in Florida and the Gulf of Mexico.
