At Big Alaska Seafood, we source high-quality Pacific albacore out of the Central and Southwestern Pacific, but ideally out of Hawaii. Warm-water albacore is mild and has a medium to rich flavor, meaty undertones, and an ocean-fresh finish. The texture is firm, dense, moist and steaky.

It is portioned, brined, dried, and then smoked with Apple and Alderwood here in Seattle. Our Smoked Albacore is produced in small to medium-sized batches to ensure quality.
