The Baja Blue Shrimp are sustainably harvested off the Western coast of Mexico using the centuries-old, artisanal methods with small boats with sails. The trawl techniques allow these Panga boats and their fisherpeople to return all bycatch from their nets to the sea thereby achieving a highly targeted and sustainable fishery for these Wild Blue shrimp. The crisp and clean ocean-like flavor of these large blue beauties will pop in your mouth with a burst of sweetness and light brine.
